Peanut Butter Candy

Ingredients:

Peanut Butter Candy

  • 1 cup (2 sticks) butter or margarine
  • 1 jar (18 ounces) creamy peanut butter
  • 1 pound powdered sugar
  • 1 1/2 cups graham cracker crumbs
  • 1 package (12 ounces) semi-sweet chocolate chips

Directions:

  1. Melt butter in a large microwave-safe bowl.
  2. Stir in peanut butter, sugar, and graham cracker crumbs; mix well.
  3. Spread mixture in a 13 x 9 x 2-inch pan.
  4. Melt the chocolate (see note); spread over the graham cracker mixture.
  5. Cover and refrigerate until hardened.
  6. Let stand at room temperature for 30 minutes before cutting to prevent the chocolate from cracking.
  7. Cut into 1-inch squares.
  8. Keep refrigerated.
  9. Cool before cutting into 1-inch squares.
  10. Makes about 108 squares.

Note: To melt chocolate in a microwave oven, place chocolate into a microwave-safe bowl and place the bowl in the microwave oven for 2 1/2 minutes at 50% power. The chocolate might not appear to be melted, but check by stirring with a rubber spatula. If after stirring, there are un-melted bits remaining, microwave it again at 50% power for 5 to 10 second intervals, stirring after each interval.
