Philly Cheese Steak Stuffed Green Peppers

Ingredients:

Philly Cheese Steak Stuffed Green Peppers

  • 1 tablespoon extra-virgin olive oil
  • 1 large Maui onion, chopped
  • 8 ounces white mushrooms, sliced
  • 2 tablespoons minced garlic
  • 12 ounces deli roast beef, chopped
  • 8 bell peppers (any color or mixed), top cut off and deseeded
  • 8 slices Provolone cheese, cut in halves

Directions:

  1. Preheat oven to 400°F.
  2. Line baking dish with aluminum foil.
  3. Heat oil in large saute pan, over medium high.
  4. Add onion, mushrooms and minced garlic, and cook until soft.
  5. Add roast beef for last minute or so to give it the flavor of the onions and garlic.
  6. Place bell peppers in baking dish.
  7. Place a half slice of cheese in the bottom of each bell pepper.
  8. Next, fill each bell pepper with 1/8 of the onion, garlic, mushroom, roast beef mixture.
  9. Bake the bell peppers for 20-30 minutes or until desired doneness.
  10. Remove bell peppers from oven and place half slice of cheese on top of each.
  11. Place bell peppers back in oven and broil for 2-3 minutes.
  12. Watch closely so they do not burn.

Makes 8 servings.
