- Preheat oven to 400°F.
- Line baking dish with aluminum foil.
- Heat oil in large saute pan, over medium high.
- Add onion, mushrooms and minced garlic, and cook until soft.
- Add roast beef for last minute or so to give it the flavor of the onions and garlic.
- Place bell peppers in baking dish.
- Place a half slice of cheese in the bottom of each bell pepper.
- Next, fill each bell pepper with 1/8 of the onion, garlic, mushroom, roast beef mixture.
- Bake the bell peppers for 20-30 minutes or until desired doneness.
- Remove bell peppers from oven and place half slice of cheese on top of each.
- Place bell peppers back in oven and broil for 2-3 minutes.
- Watch closely so they do not burn.
