Pineapple Bars

Ingredients:

Pineapple Bars

  • Non-stick cooking spray
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cup crushed pineapple, well drained
  • Powdered sugar

Directions:

  1. Heat oven to 350°F.
  2. Coat 8x8-inch baking pan with non-stick spray.
  3. In a large bowl or stand mixer bowl, cream together butter, sugar and eggs.
  4. Add flour, baking soda and salt.
  5. Mix to combine.
  6. Stir or gently mix in pineapple.
  7. Spread into prepared pan.
  8. Bake for 28-33 minutes until done.
  9. Allow to cool in pan for 10 minutes.
  10. Sprinkle with powdered sugar and cut into squares.
