Pineapple Glazed Ribs
- 4 lb pork spareribs for barbeque or country-style pork ribs, rinsed
- 2 teaspoons salt
- 1 tablespoon vegetable oil
- 1 teaspoon grated ginger root
- 1 teaspoon chopped garlic
- 1/4 cup chopped shallots
- 2 tablespoons tamarind concentrate or Worcestershire sauce
- 1 can (8 oz) crushed pineapple, undrained
- 1 cup brown sugar
- 3 tablespoons cornstarch
- 1/4 cup soy sauce
- 1/2 cup water
- 1/4 cup cider vinegar
- 2 teaspoons sambal oelek (hot chili sauce), or to taste
