Pineapple Glazed Ribs

Ingredients:

Pineapple Glazed Ribs

  • 4 lb pork spareribs for barbeque or country-style pork ribs, rinsed
  • 2 teaspoons salt
  • 1 tablespoon vegetable oil
  • 1 teaspoon grated ginger root
  • 1 teaspoon chopped garlic
  • 1/4 cup chopped shallots
  • 2 tablespoons tamarind concentrate or Worcestershire sauce
  • 1 can (8 oz) crushed pineapple, undrained
  • 1 cup brown sugar
  • 3 tablespoons cornstarch
  • 1/4 cup soy sauce
  • 1/2 cup water
  • 1/4 cup cider vinegar
  • 2 teaspoons sambal oelek (hot chili sauce), or to taste

Directions:

  1. Arrange spareribs in a roasting pan; season with salt.
  2. Cover pan with foil, sealing tightly.
  3. Bake in electric oven at 375°F for 1 hour.
  4. Pour out liquid and drippings; discard or save for another use of your choice.
  5. While the ribs are baking, heat vegetable oil in a 3 or 4 quart saucepan over medium heat; add ginger, garlic and shallots and sauté until soft and fragrant, but not browned.
  6. Add tamarind, pineapple and brown sugar, stir until well mixed.
  7. In a mixing bowl, add cornstarch, soy sauce, water, vinegar and sambal oelek; stir until well mixed.
  8. Pour into saucepan, stirring continuously until mixture comes to a boil and thickens.
  9. Pour sauce evenly over ribs, cover with foil again and bake for another 1/2 hour.
  10. Remove foil and continue to bake for another hour or until soft and tender and almost falling off the bone.
  11. Skim fat; discard.
  12. Cut ribs into serving pieces and place on a serving platter.
  13. Spoon sauce over ribs and serve hot.

Makes 6 servings.
