Pineapple-Macadamia Nut Bread

Ingredients:

Pineapple-Macadamia Nut Bread

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup macadamia nut oil
  • 3/4 cup sugar
  • 2 eggs
  • 2/3 cup milk
  • 1 teaspoon vanilla
  • 1 can (8 oz) crushed pineapple in juice, well drained
  • Sugar

Directions:

  1. Preheat electric oven to 350°F.
  2. Lightly oil and flour a 9 x 5 x 3-inch loaf pan.
  3. Sift flour, baking powder, salt, and nutmeg.
  4. In large bowl of electric mixer, beat oil with the 3/4 cup sugar.
  5. Add eggs, one at a time, beating well.
  6. Add flour mixture alternately with milk.
  7. Stir in vanilla.
  8. Fold in pineapple; pour batter into prepared pan.
  9. Sprinkle top of loaf with about 1 tablespoon sugar.
  10. Bake for 45 to 55 minutes or until done.
  11. Let cool in pan for 10 minutes; remove and cool completely on rack.

Makes 1 loaf.
