Popo's Pressure Cooker Peanuts

Ingredients:

Popo's Pressure Cooker Peanuts

  • 1 pound raw peanuts, unshelled
  • 9 cups water
  • ¼ cup Hawaiian salt
  • 6 whole pieces of star anise

Directions:

  1. Rinse peanuts and place in bowl, cover with water and place weight (for example a heavy plate) on top to help keep peanuts submerged.
  2. Soak overnight.
  3. Drain peanuts and place them in pressure cooker.
  4. Add water, salt, star anise and lock the pressure cooker lid.
  5. Over high heat, bring to high pressure.
  6. Reduce heat setting to medium-low, enough to maintain low pressure and cook for 30 minutes.
  7. Remove from heat and let sit for 25 minutes.
  8. Release pressure and remove lid titling away from you allowing stream to escape.
  9. Drain liquid, remove star anise and chill peanuts in the refrigerator before serving.

Makes 6 servings.
