Pork and Chive Jiaozi (dumplings for wealth and good fortune)

Ingredients:

Pork and Chive Jiaozi (dumplings for wealth and good fortune)

  • 1/2 pound ground pork
  • 1/2 cup chives, chopped (green portion only)
  • 1/8 teaspoon salt
  • 1/4 teaspoon grated ginger
  • 1 1/2 teaspoon rice wine vinegar
  • Pinch of white pepper powder
  • 1/4 teaspoon sesame oil
  • 1 package wonton pi (round)
  • 2 tablespoons canola oil for cooking
  • 1/2 cup low-sodium chicken broth

Directions:

  1. Mix the chives with ground pork and add all the seasonings.
  2. Chill in fridge for 30 minutes.
  3. Put a small spoonful of filling into the center of the pi.
  4. Wet the edges of the pi with water and seal tightly.
  5. In a large skillet (with lid) heat oil, over medium-high heat.
  6. Place dumplings in pan and cook till golden brown, 3-5 minutes.
  7. Add chicken broth and quickly cover (oil will splatter so be careful), cook for an additional 2-3 minutes.
  8. Serve hot with black vinegar or chili garlic dipping sauce.

Makes approximately 24 dumplings.
