Pork Chops with Fresh Tomato Salsa

Ingredients:

Pork Chops with Fresh Tomato Salsa

  • 8 (6 ounces each) center-cut pork chops

Marinade:

  • 1 cup vinegar
  • 1/2 cup soy sauce
  • 4 cloves garlic, crushed
  • 1 inch ginger root, crushed
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Salsa:

  • 2 cups finely diced tomatoes
  • 1/2 cup finely diced onions
  • 1 to 3 Hawaiian red chili peppers, seeded and chopped
  • 2 tablespoons vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions:

  1. Trim excess fat from pork chops; set aside.
  2. Combine marinade ingredients and marinate chops for at least one hour.
  3. Broil or grill pork chops for 10 to 12 minutes on each side or until done.
  4. In a small bowl, combine salsa ingredients; serve with pork chops.

Makes 8 servings.
