Pork, Red Pepper and Shiitake Mushroom Stir-fried in Lard

Ingredients:

Pork, Red Pepper and Shiitake Mushroom Stir-fried in Lard

  • 1 pound pork, sliced into thin strips
  • 3 tablespoons tamari
  • 2 tablespoons lard, divided
  • 1 tablespoon peeled, chopped ginger
  • 2 cloves garlic, chopped
  • 1/2 pound shiitake mushrooms, sliced
  • 1 red pepper, sliced thinly

Directions:

  1. Marinate pork in 2 tablespoons of tamari.
  2. Heat 2 tablespoons of lard in sauté pan on medium high heat.
  3. Add in pork and cook for 3 minutes.
  4. Remove pork and set aside.
  5. Add remaining lard, ginger, and garlic to the hot pan.
  6. Stir fry for 30 seconds.
  7. Add in mushrooms and peppers.
  8. After a few minutes, add pork back to pan.
  9. Remove from heat once everything has become tender.
  10. Drizzle remaining tamari and serve immediately.

Makes 4 servings.

Tip: Render lard using a slow cooker with fat previously ground by your local butcher.
