Portuguese Sausage Sweet Bread Stuffing

Ingredients:

Portuguese Sausage Sweet Bread Stuffing

  • Non-stick vegetable spray
  • 1 (12-ounce) package Portuguese sausage, cubed
  • 1/2 cup butter
  • 2 cups chopped celery
  • 1 medium onion, chopped
  • 1/2 cup chopped green bell pepper
  • 12 cups cubed Hawaiian sweet bread, toasted
  • 1/2 cup shredded Parmesan cheese
  • 1 tablespoon minced fresh basil
  • 1 teaspoon rubbed sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups low-sodium chicken broth
  • 2 eggs, slightly beaten

Directions:

  1. Preheat oven to 325°F.
  2. Coat a 3-quart baking dish with non-stick spray.
  3. In large skillet, cook sausage over medium heat until no longer pink; drain fat.
  4. Remove from skillet; set aside.
  5. In the same skillet, melt butter.
  6. Add the celery, onion, and green pepper; sauté until tender.
  7. In a very large bowl, combine sweet bread, sausage, celery mixture, cheese, and seasonings.
  8. Add broth and eggs; toss to combine.
  9. Spoon mixture into baking dish; cover with foil; bake for 1 hour.
  10. Uncover; bake 10 minutes longer or until lightly browned.

Makes 14 servings.
