- 1 1/2 pounds sweet potatoes, cut into spears
- 1 1/2 pounds Idaho or russet potatoes, cut into spears
- 1 cup zesty Italian dressing
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
