Prawns with Honey-Glazed Walnuts

Ingredients:

Prawns with Honey-Glazed Walnuts

  • 1/2 lb prawns or shrimp
  • 2 cups water
  • 1 cup walnuts
  • 4 cups water
  • 1/2 cup sugar
  • 1/4 cup honey
  • Salad oil for frying
  • 2 egg whites, beaten
  • 1/4 cup cracker meal
  • 1/2 tablespoon white vinegar
  • 2 tablespoons mayonnaise
  • 1 tablespoon sweetened condensed milk
  • 1 tablespoon sugar

Directions:

  1. Remove shells and veins from prawns.
  2. Bring the 2 cups water to a boil; add walnuts and cook for 10 minutes.
  3. Drain.
  4. Bring the 4 cups water and 1/2 cup sugar to a boil.
  5. Add blanched walnuts and cook for 10 more minutes.
  6. Drain.
  7. Combine walnuts and honey.
  8. In a wok, heat oil to 325 F.
  9. Fry walnuts for 5 to 8 minutes or until golden brown; remove from oil.
  10. Dip prawns in egg whites; roll in cracker meal.
  11. Fry prawns for 1 to 2 minutes in the hot oil.
  12. Drain oil from wok.
  13. In the hot wok, combine the remaining ingredients; add prawns and cook for 1 more minute.
  14. Serve with walnuts.

Makes 4 servings.
