Pressure Cooker Split Pea Soup

Ingredients:

Pressure Cooker Split Pea Soup

  • 5 slices bacon, chopped
  • 1 cup cooked ham, chopped
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 2 carrots, chopped
  • 1 potato, peeled and finely chopped
  • 1 cup green split peas, rinsed
  • 2 1/2 cups vegetable or chicken stock
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • Fresh flat-leaf parsley, minced, for garnish

Directions:

  1. In a 5-quart or larger pressure cooker, heat bacon over medium high heat.
  2. After bacon has released some of its fat, stir in ham, onion and garlic.
  3. Cook until onion is transparent.
  4. Add carrots, potato, split peas and stock; stir to mix.
  5. Add bay leaf, salt and pepper.
  6. Over high heat, bring to high pressure.
  7. Reduce heat setting to medium-high, enough to maintain a constant pressure and cook for 20 minutes.
  8. Remove from heat and let sit for 25 minutes.
  9. Release pressure and remove lid tilting away from you allowing stream to escape.
  10. Serve soup in bowls; garnish with parsley.

Makes 6 servings.
