Pumpkin Applesauce Bread

Ingredients:

Pumpkin Applesauce Bread

  • 3 1/2 cups flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • 1 cup canned pumpkin
  • 1 cup applesauce
  • 2/3 cup cold apple juice or water
  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs, beaten
  • 1 cup chopped nuts (optional)

Directions:

  1. Preheat oven to 350°F.
  2. Grease and flour three medium sized (8 1/2 x 4 1/2 x 2 1/2-inch) loaf pans.
  3. Sift flour with salt, cinnamon, and baking soda.
  4. Combine pumpkin, applesauce, and juice. In a large bowl, combine sugar, oil, and eggs.
  5. Add flour mixture alternately with pumpkin mixture, mixing only enough to moisten flour.
  6. Stir in nuts.
  7. Pour into prepared pans; bake for 50-60 minutes, or until done.

Makes 3 loaves.
