- Preheat oven to 350°F.
- Grease 9x13-inch baking pan.
- Beat butter and 1/3 cup sugar until fluffy.
- Add oats and flour; mix well.
- Spread evenly onto bottom of prepared pan.
- Bake 18-20 min or until light golden brown.
- Cool slightly, beat cream cheese and remaining sugar at medium speed with an electric mixer until fluffy.
- Add eggs one at a time, mixing well after each addition.
- Add remaining ingredients; mix until smooth.
- Pour over partially cooled crust.
- Bake an additional 45-50 min or until center appears set.
- Cool completely on wire rack; chill.
- Serve with optional whipped cream.

Tip: An easy way to soften cream cheese is a water bath. Place the cream cheese in an airtight plastic bag and let it sit in a bowl of lukewarm water for 10 minutes. If it's not soft enough, let it sit for another 5-10 minutes. Add more warm (not hot) water and let it sit until you get your desired softness.
