Pumpkin Dream Bar

Ingredients:

Pumpkin Dream Bar

  • 1/2 cup unsalted butter
  • 1 1/3 cups sugar, divided
  • 1 cup rolled oats, uncooked
  • 3/4 cup flour
  • 2 (8-ounce) packages cream cheese, softened
  • 4 eggs 1 (16-ounce) can solid pack pumpkin
  • 1/2 cup light or dark corn syrup
  • 2 teaspoons cinnamon
  • Whipped cream for serving (optional)

Directions:

  1. Preheat oven to 350°F.
  2. Grease 9x13-inch baking pan.
  3. Beat butter and 1/3 cup sugar until fluffy.
  4. Add oats and flour; mix well.
  5. Spread evenly onto bottom of prepared pan.
  6. Bake 18-20 min or until light golden brown.
  7. Cool slightly, beat cream cheese and remaining sugar at medium speed with an electric mixer until fluffy.
  8. Add eggs one at a time, mixing well after each addition.
  9. Add remaining ingredients; mix until smooth.
  10. Pour over partially cooled crust.
  11. Bake an additional 45-50 min or until center appears set.
  12. Cool completely on wire rack; chill.
  13. Serve with optional whipped cream.

Makes 24 servings.

Tip: An easy way to soften cream cheese is a water bath. Place the cream cheese in an airtight plastic bag and let it sit in a bowl of lukewarm water for 10 minutes. If it's not soft enough, let it sit for another 5-10 minutes. Add more warm (not hot) water and let it sit until you get your desired softness.
