Pumpkin Mashed Potatoes

Ingredients:

Pumpkin Mashed Potatoes

  • 2 1/2 pounds potatoes, peeled and boiled
  • 2 tablespoons butter
  • 1/4 cup half and half
  • 1 can (15 ounces) pumpkin puree (not pumpkin pie filling)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 tablespoons maple syrup
  • 2 tablespoons miso paste (may substitute with 1 teaspoon of Worcestershire sauce)
  • Salt and freshly ground black pepper to taste
  • Minced fresh chives or parsley for garnish

Directions:

  1. Bring a pot of water to a boil.
  2. Add potatoes and cook until tender but still firm, about 15 minutes; drain.
  3. In a large bowl, mash potatoes.
  4. Mash and stir in half and half and pumpkin puree.
  5. Add remaining ingredients and mix until smooth.
  6. Do not over mix.
  7. Taste and adjust seasonings if needed.
  8. Garnish with chives or parsley.

Makes 6 servings.
