Pumpkin with Dried Shrimp

Ingredients:

Pumpkin with Dried Shrimp

  • 2 lb pumpkin (kabocha)
  • 1/2 cup water
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 10 dried shrimp (ebi)
  • Dash of salt
  • 1 cup frozen peas

Directions:

  1. Peel and remove seeds from pumpkin; cut pumpkin into 1-inch pieces.
  2. In a large saucepan, combine the pumpkin, water, soy sauce, brown sugar, shrimp, and salt.
  3. Cover and bring to a boil.
  4. Lower heat and simmer, stirring or tossing mixture occasionally, for 15 minutes or until pumpkin is done.
  5. Add peas and cook, uncovered, until liquid evaporates.

Makes 6 servings.
