- 2 medium tomatoes, diced
- 1/3 cup balsamic vinegar
- 1/3 cup extra virgin olive oil
- 3 minced shallots or 1/2 cup thinly sliced red onion
- 1 large clove garlic, minced
- 1/4 teaspoon salt
- 2 quarts torn salad greens
- 1/2 cup walnut halves
- 2/3 cup crumbled blue or feta cheese
- Fresh ground pepper to taste
