Sauteed Pumpkin

Ingredients:

Sauteed Pumpkin

  • 2 lb pumpkin
  • 1 cup water
  • 1 1/2 tablespoons salad oil
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon sake
  • 1 1/2 tablespoons dried shrimps, chopped
  • 1 tablespoon sugar
  • 1 1/2 teaspoons grated ginger root
  • 1/2 teaspoon salt

Directions:

  1. Leaving skin on pumpkin, cut into halves; remove seeds.
  2. Cut pumpkin into 2-inch pieces; set aside.
  3. In a large saucepan, combine remaining ingredients.
  4. Cover and bring to a boil; simmer for 5 minutes.
  5. Add pumpkin.
  6. Tossing occasionally, cook uncovered for about 10 minutes or until pumpkin is tender and liquid evaporates.

Makes 6 servings.
