Sauteed Sole over Fresh Greens

Ingredients:

Sauteed Sole over Fresh Greens

  • 1/2 lb filet of sole, cut into strips
  • Salt and pepper to taste
  • Garlic powder to taste
  • 1 tablespoon butter
  • 5 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon minced garlic
  • 2 teaspoons honey
  • 1 tablespoon Dijon mustard
  • 4 cups salad greens

Directions:

  1. Season fish with salt, pepper, and garlic powder.
  2. In a skillet, heat butter and 1 tablespoon of the oil.
  3. Lightly brown fish on both sides.
  4. Whisk vinegar, garlic, honey, mustard, and the remaining 4 tablespoons oil together; season with salt and pepper.
  5. Add dressing to salad greens; place on serving plate.
  6. Place fish over greens.

Makes 2 servings.
