Sesame Salt
- 1/2 cup sesame seeds
- 2 teaspoons coarse salt

Toast the sesame seeds in a medium skillet over moderate heat, stirring frequently, until fragrant and lightly browned, 3 to 4 minutes; cool. Place sesame seeds in a spice grinder, or mortar, or mini food processor, grind the seeds with the salt to a coarse powder. Sesame salt can be refrigerated for up to one month. Makes 1/2 cup.
