Soba Salad in a Jar with Spicy Peanut Dressing

Ingredients:

Soba Salad in a Jar with Spicy Peanut Dressing

Spicy Peanut Dressing:

  • 2 tablespoons peanut butter
  • 4 teaspoons sambal oelek (ground chili paste; available in the Asian section)
  • 4 teaspoons rice vinegar
  • 4 teaspoons low-sodium shoyu
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon black sesame seeds

Salad:

  • 2 cups cooked soba (Japanese buckwheat noodles)
  • 1 red bell pepper, thinly sliced
  • 1 cup shelled edamame, cooked
  • 2 large carrots, peeled and shredded
  • 4 green onions, thinly sliced
  • 1/2 cup won ton strips
  • 2 teaspoons furikake (seaweed rice seasoning)
  • 4 (16-ounce) wide-mouth jars

Directions:

  1. In a small bowl, whisk together peanut butter, sambal oelek, rice vinegar and shoyu.
  2. While whisking, slowly drizzle in oil until all oil is incorporated.
  3. Stir in sesame seeds.
  4. Divide dressing equally among 4 mason jars.
  5. Divide soba noodles over dressing.
  6. Layer remaining ingredients, ending with won ton strips and garnish with furikake.
  7. Top with lids and refrigerate up to 3-5 days.
  8. To serve, pour onto plate or bowl, stir and enjoy.

Serves 4.
