Spareribs with Mango Sauce

Ingredients:

Spareribs with Mango Sauce

  • 4 pounds country style spareribs
  • 2 cups sliced ripe mangoes
  • 1/2 cup brown sugar
  • 1/3 cup catsup
  • 1/3 cup vinegar
  • 2 tablespoons soy sauce
  • 2 cloves garlic
  • 2 teaspoons ginger
  • 1 teaspoon salt
  • Dash of pepper

Directions:

  1. Preheat oven to 450°F.
  2. Place spareribs, meat side up, in a shallow baking pan.
  3. Bake for 45 minutes; pour off fat.
  4. Put remaining ingredients in blender container; cover and blend at high speed until smooth.
  5. Spoon sauce over ribs.
  6. Lower oven temperature to 350°F.
  7. Bake 1 1/2 hours or until done.
  8. Baste every 15 minutes.
  9. Cut into serving-size pieces.

Makes 4 servings.
