Spicy Chinese Chicken Salad Dressing

Ingredients:

Spicy Chinese Chicken Salad Dressing

  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 6 tablespoons vegetable oil
  • 4 scallions (green onions), chopped
  • 1-inch piece fresh ginger, minced or grated
  • 1/2 teaspoon crushed red pepper

Directions:

  1. In a small bowl, combine soy sauce, honey, garlic, and salt; let stand for 5 minutes.
  2. In a small saucepan over low heat, heat salad oil, scallions, ginger and red pepper for 3 minutes.
  3. Combine both mixtures; mix well.

Makes about 1 1/4 cups.

Serving suggestion: Serve with shredded lettuce and cooked, shredded chicken; top with fried won ton pi chips and chopped toasted almonds.
