Spinach Parmesan Pie

Ingredients:

Spinach Parmesan Pie

  • 1 tablespoon butter or margarine
  • 4 green onions, chopped
  • 2 cloves garlic, minced
  • 1 pkg (10 oz) frozen chopped spinach, thawed and squeezed to remove excess moisture
  • 1/2 cup small curd cottage cheese
  • 1/2 cup buttermilk baking mix
  • 1 cup milk
  • 3 eggs, beaten
  • 1 teaspoon lemon juice
  • 1/4 teaspoon pepper
  • 3 tablespoons grated Parmesan cheese
  • 1/2 teaspoon ground nutmeg
  • Grated parmesan cheese

Directions:

  1. Preheat electric oven to 350°F.
  2. Grease a 9-inch pie plate.
  3. In a medium skillet, melt butter over medium heat.
  4. Add onions and garlic; cook until tender, about 2 to 3 minutes.
  5. Add spinach; mix well.
  6. Put into prepared pie plate; spread with cottage cheese.
  7. Combine baking mix, milk, eggs, lemon juice, and pepper; stir until just blended.
  8. Pour over cottage cheese layer; sprinkle with the 3 tablespoons Parmesan cheese and the nutmeg.
  9. Bake for 35 minutes, or until a knife inserted in the center comes out clean.
  10. Before serving, sprinkle with Parmesan cheese.

Makes 6 servings.
