Star Fruit Upside-Down Cake

Ingredients:

Star Fruit Upside-Down Cake

  • 1/2 cup brown sugar, not packed
  • 2 star fruit, cut horizontally into 1/2 inch slices
  • 1/2 cup fresh blueberries
  • 2 tablespoons orange juice
  • 1/2 cup olive oil
  • 2/3 cup granulated sugar
  • 1 egg plus 2 egg whites, beaten
  • 1 1/2 cups cake flour
  • 1 1/2 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup whole milk
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon almond extract

Directions:

  1. Preheat oven to 350°F.
  2. Lightly grease a 9-inch round cake pan; sprinkle brown sugar evenly on bottom of pan.
  3. Arrange sliced star fruit as close together as possible, pressing down into sugar.
  4. Fill gaps with fresh blueberries and drizzle orange juice on top fruits.
  5. In a large bowl, combine oil and granulated sugar.
  6. Add eggs and mix.
  7. In another bowl, combine flour, baking powder, and salt.
  8. Add flour mixture, alternating with milk, to oil mixture.
  9. Stir in vanilla and almond extracts.
  10. Pour batter over star fruit and bake for 30 minutes.
  11. Let cool for 5 minutes, then invert cake onto serving plate.

Makes 12 servings.
