Stir Fry Beef with Mushrooms

Ingredients:

Stir Fry Beef with Mushrooms

Beef mixture:

  • 1 tablespoon oyster sauce
  • 1 tablespoon hoi sin sauce
  • 1 tablespoon sugar
  • 1 clove garlic, peeled and minced
  • 3 slices ginger, peeled and slivered
  • 1 tablespoon Chinese cooking wine
  • 1 teaspoon cornstarch
  • 1/2 pound beef, thinly sliced

Mushroom mixture:

  • 1 cup chives, cut into 1" pieces
  • 1 can (15-ounces) sliced bamboo shoots, drained and rinsed
  • 1 can (15-ounces) button mushrooms, drained and rinsed

Cornstarch mixture:

  • 1/2 cup beef broth
  • 2 tablespoons cornstarch
  • Salt to taste
  • 4 tablespoons oil, divided as noted below
  • Cilantro (Chinese parsley) for garnish

Directions:

  1. In a medium bowl, mix oyster sauce, hoi sin sauce, sugar, garlic, ginger, cooking wine, and cornstarch; mix in beef to coat.
  2. In a separate medium bowl, combine chives, bamboo shoots, and mushrooms; set aside.
  3. In another small bowl, mix beef broth, cornstarch, and salt to taste; set aside.
  4. Heat wok; add 2 tablespoons oil and heat until smoky.
  5. Add beef mixture and sear on high heat until medium rare.
  6. Remove and set aside.
  7. Reheat wok with 2 tablespoons oil.
  8. Stir fry mushrooms mixture.
  9. Add cornstarch mixture to thicken.
  10. Add beef mixture and heat well.
  11. Garnish and serve.

Makes 4 servings.
