Strawberry Spinach Salad

Ingredients:

Strawberry Spinach Salad

  • 2 tablespoons poppy seeds
  • 1/2 cup sugar
  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon Worcestershire sauce
  • 1 quarter of red onion, sliced thinly
  • 10 ounces fresh spinach, rinsed and dried
  • 1 quart strawberries, cleaned, hulled and sliced
  • 1/4 cup almonds, blanched and slivered

Directions:

  1. In a medium bowl, whisk together poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion.
  2. Cover, and chill for one hour.
  3. In a large bowl, combine onions, spinach, strawberries and almonds.
  4. Pour dressing over salad, and toss.
  5. Refrigerate 10-15 minutes before serving.

Serves 4.
