Stuffed Cornish Game Hens with Passion Fruit Glaze

Ingredients:

Stuffed Cornish Game Hens with Passion Fruit Glaze

  • 6 Cornish game hens
  • 1 package (6 ounces) long grain and wild rice
  • 1/4 cup butter
  • 1/2 cup passion fruit jelly
  • 1 tablespoon lemon juice
  • 2 teaspoons grated lemon zest
  • 1 teaspoon seasoned salt
  • 1/8 teaspoon pepper

Directions:

  1. Rinse and drain hens; pat dry.
  2. Prepare rice according to package directions.
  3. Stuff hens with rice; skewer openings.
  4. Place hens on a rack in a shallow pan.
  5. Roast hens in electric oven at 350°F for 30 minutes.
  6. In a small saucepan, melt butter with jelly.
  7. Stir in juice, rind, salt and pepper.
  8. Baste hens with jelly mixture and continue roasting for 30 to 45 more minutes, basting frequently.

Makes 6 servings.
