- Rinse and drain hens; pat dry.
- Prepare rice according to package directions.
- Stuff hens with rice; skewer openings.
- Place hens on a rack in a shallow pan.
- Roast hens in electric oven at 350°F for 30 minutes.
- In a small saucepan, melt butter with jelly.
- Stir in juice, rind, salt and pepper.
- Baste hens with jelly mixture and continue roasting for 30 to 45 more minutes, basting frequently.
