Summer Peach Basil Vinaigrette

Ingredients:

Summer Peach Basil Vinaigrette

  • 1/3 cup white balsamic vinegar
  • 1 garlic clove, minced
  • 2 tablespoons brown sugar
  • 1/4 teaspoon freshly ground pepper
  • 1/8 teaspoon salt
  • 2 tablespoons olive oil
  • 1 large peach, chopped
  • 1 1/2 tablespoons chopped fresh basil

Directions:

  1. Whisk together first 5 ingredients until sugar is dissolved.
  2. Whisk in olive oil.
  3. Stir in chopped peach and basil.
  4. Serve immediately over a bed of fresh greens or local tomatoes.

Makes 1 1/4 cups.
