Super Asian Slaw

Ingredients:

Super Asian Slaw

Dressing:

  • 6 tablespoons rice vinegar
  • 6 tablespoons vegetable oil
  • 5 tablespoons creamy peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons golden brown sugar
  • 2 tablespoons minced fresh ginger root
  • 1 tablespoon minced garlic

Slaw:

  • 5 cups thinly sliced green cabbage
  • 2 cups thinly sliced red cabbage
  • 2 large red or yellow bell peppers, cut into matchstick-size strips
  • 2 medium carrots, cut into matchstick-size strips
  • 8 large green onion, cut into matchstick-size strips
  • 1/2 cup chopped fresh Chinese parsley (cilantro)
  • Salt and pepper to taste

Directions:

  1. In a small bowl, whisk dressing ingredients to blend; cover and chill.
  2. Let stand at room temperature 30 minutes before using.
  3. Dressing may be made a day ahead.
  4. Combine slaw ingredients in a large bowl.
  5. Add dressing and toss to coat.
  6. Season with salt and pepper; serve.

Makes 8 servings.
