- 2 cups sweet mini peppers, cut into long strips (red, yellow & orange colors)
- 1 medium cucumber, peeled, seeded and sliced (about 1 cup)
- 1 small red onion, thinly sliced (about ½ cup)
- 10 pitted calamata olives, halved
- Juice from one large lemon (about ¼ cup)
- ½ teaspoon lemon zest
- ¼ cup extra virgin olive oil
- 1 ½ teaspoons kosher salt
- ½ teaspoon pepper
- ½ cup feta cheese
