- 2 cups uncooked rice
- 1/4 low-sodium shoyu
- 2 tablespoon mirin
- 2 tablespoon dry dashi (Japanese fish stock)
- 1 3/4 cup water
- 3/4 cup dried shiitake (reconstituted), chopped
- 3/4 cup carrots, julienned
- 3/4 cup aburage (deep fried tofu), chopped into thin strips (available in Asian section)
- 3/4 cup bamboo shoots, julienned
