Dean's Delicious Salad

Ingredients:

Dean's Delicious Salad

  • 1/4 lb Dean's Greens, washed and drained well
  • 1 each Hauula red, yellow, and green zebra tomato, sliced
  • 8 Nalo Farms' baby beets, oven roasted and sliced
  • 1 ear Nozawa super sweet corn
  • 4 ounces Hawaii Island Goat Dairy goat cheese
  • Pound da Mochi mochi crunch (Japanese rice crackers) for garnish

Directions:

  1. Divide greens, tomatoes, and beets among 4 salad plates.
  2. Cut corn kernels off the cob and sprinkle over salad.
  3. Arrange dollops of goat cheese on each plate.
  4. Squeeze Nalo Farms' Ewa Sweet Onion Vinaigrette over salad.
  5. Garnish with mochi crunch.

Makes 4 servings.
