New Year Kicker
- 1/2 cup plain whole milk yogurt, gelatin free
- 1 medium English or Japanese cucumber, peeled, seeded, and diced
- 1/4 cup finely minced red onion
- 1 medium ripe avocado (Haas variety), peeled and diced
- 1 large ripe tomato (or 2 small tomatoes), peeled and diced
- 2 tablespoons chopped mint or cilantro leaves
- Salt and pepper to taste
