- 5 tablespoons salad oil
- 3 eggs, beaten
- 1 small onion, thinly sliced
- 1/2 cup chopped dried shrimp
- 4 cups cooked rice
- 1 cup frozen mixed vegetables, thawed
- 1 can (4 oz) sliced mushrooms, drained
- Salt to taste
- Hot pepper-soy sauce to taste
- Chili powder to taste
- Shredded lettuce
