Onion Soup

Ingredients:

Onion Soup

  • 2 medium onions, cut into thin crescents
  • 1/2 teaspoon sesame oil
  • 1 can (14 1/2 oz) vegetable broth
  • 3 cups boiling water
  • 1/4 teaspoon sea salt (optional)
  • 1 tablespoon soy sauce or tamari

Directions:

  1. In a medium saucepan, saute onions in sesame oil until onions are transparent.
  2. Add the broth and boiling water.
  3. Cover and simmer for 5 minutes.
  4. Add the salt; cover and simmer for 30 more minutes.
  5. Just before serving, add soy sauce.
  6. Serve immediately.

Makes 6 servings.
