Haupia Biscuits

Ingredients:

Haupia Biscuits

  • Non-stick cooking spray
  • 2 (16.3-ounce) cans Pillsbury biscuits
  • 1 (13.5-ounce) can coconut milk
  • 3 tablespoons sweetened condensed milk
  • ¾ cup sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Directions:

  1. Heat oven to 350°F.
  2. Coat 9x13-inch pan with non-stick spray.
  3. Place biscuits in pan in a single layer.
  4. Pour coconut milk, condensed milk and sugar in medium pot and simmer on medium heat.
  5. Add cornstarch slurry.
  6. Whisk constantly until haupia mixture thickens, about 5-10 minutes.
  7. Remove from heat and pour haupia mixture over biscuits. (Biscuits will float in pan.)
  8. Bake uncovered for 25 minutes or until light golden brown.
  9. To serve, flip entire pan into another pan or serving tray so haupia is on top.

Serves 20.
