Ahi with Linguine

Ingredients:

Ahi with Linguine

  • 1/2 pound linguine
  • 1 pound ahi fillet or other firm fish
  • 2 tablespoons vegetable or olive oil
  • 1/2 onion, thinly sliced
  • 1 clove garlic, minced
  • 3 tablespoons white wine
  • 2 tablespoons thinly sliced sun-dried tomatoes
  • 2 tablespoons capers
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1 tablespoon minced parsley

Directions:

  1. Cook linguine according to package directions; drain and keep warm.
  2. Cut fish into 1-inch cubes.
  3. Heat 1 tablespoon of the oil in a skillet on medium heat.
  4. Saute onion and garlic until golden brown; remove from skillet and set aside.
  5. Add the remaining 1 tablespoon oil to the skillet and sauté fish for 2 to 3 minutes or until fish flakes easily when tested with a fork.
  6. Add onion, garlic, wine, sun dried tomatoes, capers, Parmesan cheese, and salt; toss gently.
  7. Serve fish on linguine and sprinkle with minced parsle
