Apple Cake with Soft Custard

Ingredients:

Apple Cake with Soft Custard

Apple Cake Ingredients:

  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1 1/2 cups cake flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 2 apples, thinly sliced
  • 2 tablespoons powdered sugar
  • 1 tablespoon melted butter or margarine
  • 1/2 teaspoon ground cinnamon

Soft Custard Sauce Ingredients:

  • 2 eggs, beaten
  • 1/4 cup sugar
  • 1/8 teaspoon salt
  • 2 cups milk, scalded
  • 1/2 teaspoon vanilla

Directions:

Apple Cake Instructions:

  1. Cream shortening and sugar.
  2. Add egg and beat thoroughly.
  3. Sift flour, baking powder, and salt; add alternately with the combined milk and vanilla.
  4. Pour into a greased and lined 8-inch square cake pan.
  5. Cover with layer of apple slices; sprinkle with 1 tablespoon powdered sugar and butter.
  6. Bake at 350°F for 45 minutes.
  7. Invert onto a platter; sprinkle with remaining sugar and cinnamon.
  8. Cut in squares and serve warm with Soft Custard Sauce.

Makes 8 servings.

Note: Apples sink to the bottom during baking.

Soft Custard Sauce Instructions:

  1. In a saucepan, combine eggs, sugar, and salt; mix well.
  2. Add the milk to the egg mixture; mix thoroughly.
  3. Cook over medium heat until mixture coats a spoon.
  4. Add vanilla.
  5. Serve over Apple Cake.
