Apricot Bars

Ingredients:

Apricot Bars

  • 1 1/3 cups dried apricots
  • 1 cup chilled butter
  • 1/2 cup granulated sugar
  • 2 2/3 cups flour
  • 2 cups brown sugar
  • 4 eggs, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup chopped nuts (optional)
  • Powdered sugar (optional)

Directions:

  1. Grease a 13 x 9 X 2-inch pan; set aside.
  2. Rinse apricots, place into a small saucepan and cover with water.
  3. Bring to a boil and simmer for 10 minutes.
  4. Drain, cool, and chop apricots; set aside.
  5. Preheat oven to 350°F.
  6. In a large mixing bowl, combine 2 cups of the flour and the granulated sugar; cut butter into flour mixture until crumbly.
  7. Press mixture evenly into prepared pan.
  8. Bake for 20 to 25 minutes; cool.
  9. In a large mixing bowl, mix brown sugar, eggs, and vanilla until well blended.
  10. Add the remaining 2/3 cup flour, baking powder, and salt; mix well.
  11. Stir in nuts and apricots.
  12. Spread mixture over cooled crust and bake for 30 minutes or until done.
  13. Cool in the pan.
  14. Cut into bars and sprinkle with powdered sugar, if desired.

Makes 36 bars.
