- Grease a 13 x 9 X 2-inch pan; set aside.
- Rinse apricots, place into a small saucepan and cover with water.
- Bring to a boil and simmer for 10 minutes.
- Drain, cool, and chop apricots; set aside.
- Preheat oven to 350°F.
- In a large mixing bowl, combine 2 cups of the flour and the granulated sugar; cut butter into flour mixture until crumbly.
- Press mixture evenly into prepared pan.
- Bake for 20 to 25 minutes; cool.
- In a large mixing bowl, mix brown sugar, eggs, and vanilla until well blended.
- Add the remaining 2/3 cup flour, baking powder, and salt; mix well.
- Stir in nuts and apricots.
- Spread mixture over cooled crust and bake for 30 minutes or until done.
- Cool in the pan.
- Cut into bars and sprinkle with powdered sugar, if desired.
