Authentic Greek Tzatziki

Ingredients:

Authentic Greek Tzatziki

  • 1 1/2 cups plain full-fat Greek yogurt
  • 2 large garlic cloves, finely minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white vinegar
  • 1/2 teaspoon salt
  • 1/2 large cucumber, unpeeled, grated and drained well
  • 1 tablespoon minced fresh dill

Directions:

  1. In a large bowl, combine the yogurt, garlic, oil, vinegar, and salt.
  2. Add grated cucumber and fresh dill to yogurt mixture and stir to combine.
  3. Serve chilled with pita bread for dipping.

Makes about 2 cups or 6 servings.

Tip: When using grated cucumber in recipes, make sure it’s well-drained. Adding a little salt to the cucumber will help leached out the water, improve the flavor, and keep it crisp. Use a cheesecloth or fine mesh sieve and leave overnight in the refrigerator to drain.
