Avocado Gelatin Dessert with Berry Puree

Ingredients:

Avocado Gelatin Dessert with Berry Puree

  • 1 package (3 ounces) lime-flavored gelatin
  • 1 tablespoon sugar
  • 1 tablespoon lime juice
  • 2 fully ripened avocados, halved, pitted, peeled and coarsely chopped
  • Extra avocado, berries, lime wedges, lime peel and/or citrus segments for garnish (optional)

Berry Purée

  • 1 cup blackberries or strawberries
  • 3 tablespoons sugar
  • 1 tablespoon lime juice

Directions:

  1. In bowl, prepare gelatin following package directions; stir in sugar and lime juice.
  2. Chill until mixture is the consistency of egg whites, stirring occasionally.
  3. In food processor, place avocado; add gelatin mixture; process until smooth and creamy.
  4. Spoon mixture into six 2/3-cup molds or 1-quart serving dish; cover and chill until firm.
  5. Quickly dip molds into hot water; turn out onto serving plates.
  6. Serve with Berry Purée, and optional, diced avocado and lime wedges.

Makes 6 servings.

Berry Purée:

  1. Process 1 cup blackberries or strawberries with 2 tablespoons sugar and 1 tablespoon lime juice until smooth.
  2. Strain into small cup; cover and refrigerate until ready to use.
