Baked Fish with Oyster Sauce-Portuguese Sausage Stuffing

Ingredients:

Baked Fish with Oyster Sauce-Portuguese Sausage Stuffing

  • 1 (5 to 7 lb size) whole fish, cleaned
  • 1 tablespoon salt
  • 3 tablespoons salad oil
  • 8 oz Portuguese sausage, thinly sliced
  • 1 small clove garlic, minced
  • 1 onion, sliced
  • 1 tomato, sliced
  • 1 cup oyster sauce
  • 1 cup mayonnaise
  • 1 teaspoon powdered ginger
  • 1 1/2 teaspoons pepper
  • 2 ti leaves

Directions:

  1. Sprinkle fish with 1 1/2 teaspoons of the salt.
  2. In a skillet, heat oil and sauté sausage, garlic, onion, and tomato.
  3. Combine oyster sauce, mayonnaise, ginger, pepper, and the remaining 1 1/2 teaspoons salt.
  4. Spread half of the oyster sauce mixture inside fish; stuff with sausage mixture.
  5. Spread remaining oyster sauce mixture over fish.
  6. Wrap fish in ti leaves and a sheet of heavy foil.
  7. Place in a pan and bake in electric oven at 350°F for to 1 hour, or until done.

Makes 8 to 12 servings.
