Baked Stuffed Fish (Mushroom, Chives, Garlic)

Ingredients:

Baked Stuffed Fish (Mushroom, Chives, Garlic)

  • 2 to 3 lb whole fish
  • 1 teaspoon salt
  • 4 large dried mushrooms, soaked
  • 1/4 cup chopped chives
  • 1 small clove garlic, minced
  • 2 tablespoons sesame oil

Directions:

  1. Preheat electric oven to 325°F.
  2. Grease a large baking pan.
  3. Clean fish; rub inside with 1/2 teaspoon of the salt.
  4. Remove stems from mushrooms; thinly slice caps.
  5. Add remaining 1/2 teaspoon salt, the chives and garlic.
  6. In a skillet, sauté mixture in 1 tablespoon of the sesame oil.
  7. Stuff fish; secure with skewers or string.
  8. Rub outside of fish with the remaining sesame oil and wrap in cheesecloth.
  9. Place on rack in prepared pan and cover with foil.
  10. Bake oven for 20 minutes per pound or until done.
  11. Serve with Vinegar-Soy Sauce.

Makes 4 servings.
