Baked Stuffed Mushrooms

Ingredients:

Baked Stuffed Mushrooms

  • Non-stick cooking spray
  • 1 pound large fresh mushrooms (uniform size)
  • 1 teaspoon salt, divided
  • 1/2 pound ground pork
  • 1/2 cup minced water chestnuts
  • 1/3 cup minced green onion
  • 1 egg
  • 1 teaspoon low-sodium shoyu
  • 1/4 teaspoon pepper
  • 1/4 cup butter, melted
  • 1/4 cup sesame seeds

Directions:

  1. Heat oven to 350°F.
  2. Coat baking pan with non-stick cooking spray.
  3. Remove stems from mushrooms; sprinkle caps with 1/2 teaspoon salt.
  4. Mince mushroom stems; add pork, water chestnuts, green onion, egg, shoyu, pepper, and remaining salt.
  5. Mix well and stuff mushroom caps with mixture.
  6. Dip stuffed portion of mushrooms into melted butter, then into sesame seed.
  7. Place in prepared baking dish and bake for 35 minutes.
  8. Serve hot.

Makes about 20 mushrooms.
