Baked Taro Puffs

Ingredients:

Baked Taro Puffs

  • 4 tablespoons butter or margarine
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups mashed, cooked taro

Directions:

  1. Preheat electric oven to 475°F.
  2. Using 1 tablespoon of the butter, butter two muffin pans with 1 3/4-inch cups.
  3. Sift flour with baking powder and salt.
  4. Work flour mixture into mashed taro.
  5. Shape into 1-inch balls and place in prepared pans.
  6. Press pieces of remaining butter into the top of each ball.
  7. Bake 10 to 15 minutes or until puffy and brown.
  8. Serve immediately.

Makes 2 dozen.
