Banana and Jackfruit Lumpia

Ingredients:

Banana and Jackfruit Lumpia

  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 6 apple bananas
  • 1 jar or 12 ounces sweetened jackfruit (available at local grocery stores or Chinatown)
  • 12 lumpia wrappers
  • 3 tablespoons local honey
  • Vegetable oil for frying

Directions:

  1. In a small saucepan, mix cornstarch and water on medium heat.
  2. Cook until slightly thickened, set aside.
  3. Cut bananas and jackfruit into lengthwise halves.
  4. Place 1 piece of banana and 1 piece of jackfruit diagonally in the center of each lumpia wrapper.
  5. Drizzle with honey.
  6. Fold nearest edge of wrapper over fruit pieces; fold left and right sides toward center.
  7. Roll tightly toward open edge.
  8. Seal with cornstarch mixture.
  9. Heat oil to 375°F.
  10. Fry lumpia until golden brown; drain well.

Makes 12 lumpia.
