Banana Oat Cookies

Banana Oat Cookies

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup old fashioned oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup brown sugar
  • 2 medium ripe bananas, mashed
  • 1 cup applesauce
  • 1/2 cup honey
  • 2 teaspoons vanilla
  • 1/2 cup mini semisweet chocolate chips (optional)

Directions:

  1. Heat oven to 375°F.
  2. In a large bowl, mix flour, oats, baking soda, cinnamon and salt.
  3. In a separate medium bowl, whisk together eggs and brown sugar until light and fluffy.
  4. Add in mashed bananas, applesauce, honey and vanilla; stir well to combine.
  5. Add wet ingredients to dry ingredients and mix to combine.
  6. Do not overmix.
  7. Add mini chocolate chips, if using.
  8. Place a spoonful of dough onto a cooking sheet lined with parchment paper.
  9. Bake for 15 minutes, until lightly golden brown.
  10. Remove from tray and allow to cool (on the parchment paper or on wax paper).
  11. Once cooled, store in fridge.
  12. They also freeze great - just throw in a labeled freezer bag once they are cooled.

Serves 30 cookies.
