Bar-B-Que Chicken

Ingredients:

Bar-B-Que Chicken

  • 5 pounds cut fresh island chicken thighs with skin
  • 2 tablespoons Hawaiian salt (or to taste)
  • 1/2 cup olive oil (may substitute with 1 block of unsalted butter)
  • 2 tablespoons minced garlic
  • 4 tablespoons fresh thyme (or thyme, rosemary, sage combination)
  • 1/3 cup red wine vinegar
  • 1/3 cup lemon or lime juice

Directions:

  1. Rub Hawaiian salt into chicken; set aside.
  2. In a large bowl, add oil and garlic; toss herbs into oil; add red wine vinegar and lemon or lime juice to marinade.
  3. Marinate chicken for at least 45 minutes.
  4. Best to marinate refrigerated overnight.
  5. Barbecue over charcoal or broil in oven.

Makes 6 servings.
